Ingredients
2clovesgarlicfinely minced
¼cuplemon juicefreshly pressed
½tspsalt
½cuptahinicreamy sesame paste; I like Kroger's Simple Truth brand and Trader Joe's
6-8tbspcold waterto achieve desired consistency
Instructions
Combine minced garlic, lemon juice, and salt in a medium mixing bowl. Stir and let sit for 10 minutes to let the garlic flavor mellow (the acid from the lemon juice takes away its sharp edge).
Add the tahini and mix with a wire whisk until you obtain a smooth texture. Add water 1-2 tbsp at a time until your sauce has the desired consistency.
Season to taste, adding more salt, lemon juice or water as desired.
In a tightly sealed container, this keeps in the fridge for a week. It tends to thicken when chilled, so whisk in additional cold water as necessary. Can be frozen for up to one month (I use an ice cube tray; once frozen, I transfer the tahini-sauce cubes to a small Ziploc bag. To defrost quickly, I microwave 1 or 2 cubes in a small bowl at half power.)
